Discard stems but do not seed or peel apples. Cut apples into 1- inch chunks. Insert the metal blade in the food processor and coarsely chop the apples in several batches. Put apples in a 4- quart, non-aluminum soup kettle. Quarter the lemons and add them to the kettle with the water. Cover and simmer until apples and lemons are very soft, stirring frequently, about 20 to 30 minutes. Reproduced with permission of the copyright owner.
