ALLAN PHILIP JAFFE, 51, who founded Preservation Hall in the early 1960s to save traditional New Orleans jazz from extinction, died of cancer Monday in New Orleans. Born into a musical family, Mr. Jaffe began playing the piano and cornet before switching to the tuba. His grandfather played French horn in the Russian Imperial Army band, and his father taught the mandolin.
