In 2007, the state Legislature passed a farm distillery law that, like the farm-winery measure a generation before, made it legal for wine makers to sell their alcoholic beverages where they're made and allowing a built-in source of revenue for scaling up a business. The Vinification & Brewing Technology Laboratory at the New York State Agriculture Experiment Station in Geneva, affiliated with Cornell University's College of Agriculture and Life Sciences, has been holding an artisan distilling workshop about every nine months for several years, and it fills its quota of 30 participants just about every time, said Chris Gerling, extension associate at the lab.
