The drink uses the farm's black twig apples, which Charlie Smith -- a fourth-generation owner of T.S. Smith & Sons, along with his brothers, Matt and Tom -- recommended Matt Cimino, winemaker at Great Shoals, use because of its hard, tart taste and its aromatics.
