The UHT process might cause some loss of folate, vitamin C (which is already low in milk), vitamin B12, and thiamin. UHT milk, like fresh milk, comes in whole, skim and low-fat varieties. Though some people might not detect taste differences between fresh and UHT milk, others may noticed a slightly sweeter or "cooked" taste to UHT products, due to the higher heat treatment.
